益生菌与益生元共包埋微胶囊技术研究进展
Research progress of co-embedding microcapsules of probiotics and prebiotics
【摘要】 益生菌与益生元作为重要的膳食补充剂越来越受欢迎,但由于在加工、贮藏和输送至胃肠道目标部位过程中活性降低,其应用受到限制。微胶囊化是提高益生菌与益生元在加工、贮藏和胃肠道消化阶段生物利用度的有效方法。综述了乳化法、挤压法、喷雾干燥法、冷冻干燥法和复合凝聚法等益生菌与益生元共包埋制备技术,并对碳水化合物及蛋白质等常用微胶囊壁材的性质及其在益生菌产品中的应用进行概述,以期为益生菌与益生元共包埋技术开发和产业化推广奠定理论基础。
【Abstract】 Probiotics and prebiotics has become more and more popular as important dietary supplements in recent years, but their industrial application suffers from the decrease of enzymatic activity during the processing, storage, and delivery to target sites in the gastrointestinal tract.Microencapsulation proves to be an effective method to improve bioavailability of probiotics and prebiotics.In this review, we summarized several preparation techniques for probiotics and prebiotics, including emulsification, extrusion, spray drying, freeze-drying and complex coagulation.In addition, we presented the properties of common microcapsule wall materials such as carbohydrates and proteins, which were applied in probiotic products.Our review will provide a theoretical guidance for the development and industrialization of probiotics and prebiotics using co-embedding technology.
