【摘要】 乳铁蛋白是人乳中极为重要的一种功能活性蛋白，对婴儿健康发育起到至关重要的作用。文章综述了乳铁蛋白的结构、人乳及婴儿配方粉中含量差异及热加工工艺对其结构的影响等生物学特点，同时着重对乳铁蛋白与婴幼儿早期免疫力建立的关系进行系统总结，特别是在预防细菌感染、预防病毒感染以及促进肠道健康等方面，以期为添加乳铁蛋白的婴儿食品及相关功能食品的开发提供理论参考。更多还原

【Abstract】 Lactoferrin is an extremely important functional protein in human milk,which plays a vital role in the health development of infants.This paper reviews the biological characteristics of lactoferrin,including its structure,the differences in its content between human milk and infant formula,and the effects of thermal processing on its structure.This paper also focuses on the connection of lactoferrin and the building of early infant immunity,especially the anti-bacterial,anti-viral,and promoted gastrointestinal health function.It provides theoretical references for the development of lactoferrin-supplemented infant foods and related functional foods.更多还原
