葡萄糖氧化酶的研究与应用进展
Progress in Development and Application of Glucose Oxidase
【摘要】 葡萄糖氧化酶(glucose oxidase,GOD)作为一种需氧脱氢酶,能够利用分子氧专一性将β-D-葡萄糖氧化生成过氧化氢和葡萄糖酸,基于这一反应机理,葡萄糖氧化酶表现出良好的杀菌和抑菌活性,因此被广泛应用于食品、饲料、临床诊断、生物技术等领域。然而,不同领域对GOD的应用环境不同,因此需要根据GOD不同的特性需求,采用先进的生物技术对GOD的特性进行优化,开发具有针对性的酶制剂。该文从来源、性质、异源表达和多领域应用等方面对葡萄糖氧化酶进行阐述,以期为葡萄糖氧化酶的开发与产业化应用提供思路。
【Abstract】 Glucose oxidase(GOD),as an aerobic dehydrogenase,can specifically oxidize β-D-glucose to hydrogen peroxide and gluconic acid by using oxygen. Based on this mechanism,glucose oxidase shows bactericidal and antibacterial activity,which is widely used in commercial fields such as food,feed,clinical diagnosis and biomonitoring. However,the application of GOD is various in different fields,so it is necessary to use advanced biotechnology to optimize the characteristics of GOD and develop targeted enzyme preparations according to different characteristics of GOD. This paper summarizes the source,properties,heterologous expression and multi-field application of glucose oxidase,in order to provide new insights for the development and industrial application of glucose oxidase.
