我国不同地区小麦蛋白质及矿物质元素的含量分析
The Content of Protein and Mineral Elements in Wheat in Different Regions of China
【摘要】 为了指导居民营养的科学摄入,指引高蛋白及高矿质小麦的栽培。研究利用凯氏定氮法和电感耦合等离子体质谱法对全国不同地区的76个小麦进行蛋白质及9种矿物质元素含量测定。研究表明:华南地区的蛋白质含量最高,为14.39 g/100 g;华北地区的钠含量最高,为12.82 mg/kg;东北地区的磷,锰,锌,镁,钾含量最高,分别为3 472.00, 46.85, 31.65, 1 337.65和4 084.60 mg/kg;西北地区的铁,铜,钙含量最高,分别为59.09, 5.14和538.27 mg/kg。该研究可以筛选出高蛋白含量及高矿质元素的品种,为优质小麦品种的推广提供了较好的理论基础。
【Abstract】 In order to guide the scientific intake of nutrients for residents and to guide the cultivation of high protein and high mineral wheat, this study uses Kjeldahl nitrogen determination method and inductively coupled plasma mass spectrometry to determine the protein and 9 mineral element contents of 76 wheat varieties from different regions of China. The research has shown that the protein content in South China is the highest, at 14.39 g/100 g; The sodium content in North China is the highest, at 12.82 mg/kg; The content of phosphorus, manganese, zinc, magnesium, and potassium in Northeast China is the highest, at 3 472.00, 46.85, 31.65, 1 337.65 and 4 084.60 mg/kg, respectively; The iron, copper, and calcium content in the northwest region is the highest, with 59.09, 5.14 and 538.27 mg/kg, respectively. This study can screen varieties with high protein content and high mineral elements, providing a good theoretical basis for the promotion of high-quality wheat varieties.
