【摘要】 “食品检测样品前处理技术”是天水师范学院为食品质量与安全专业开发的一门校本课程,旨在加强该专业食品检测方向的培养能力。积极借鉴国内外课程教学改革成果,将行业检测工作要求和专业认证要求贯穿课程建设始终,以食品检测国家标准的样品制备过程作为课程内容主要参考。教学中,将课程目标分解为教学显性目标和隐性目标,并将隐性目标有效融入显性目标,聚焦隐性目标中的学科思维培养,形成以案例式教学和探究性学习为主要特征的教学模式,教学改革取得明显成效。文章主要从课程理念与目标、课程内容与课堂教学以及考核评价等方面介绍教学实践情况,为食品检测相关课程建设与教学改革提供一定参考。更多还原

【Abstract】 Sample Preparation Technology in Food Safety Testing, a school-based curriculum, was developed by the Food Quality and Safety major of Tianshui Normal University enhancing the cultivation ability in food safety testing. Duly incorporating the achievements of teaching reform at home and abroad, the requirements of testing job in food industry and program accreditation were integrated into the entire curriculum construction process, and the sample preparation processes in the national food testing standards were selected as the main reference for course contents by the teaching team. In the teaching process, attempt to transform the curriculum objectives into explicit and implicit teaching ones, in which the latter was effectively integrated into the former, focusing on the cultivation of disciplinary thinking in implicit objectives. The teaching model characterized with case-based teaching and inquiry-based learning was therefore formed, and the significant results were achieved in the teaching reform. The results of teaching practice were introduced, mainly including the course concepts and objectives, the contents and the teaching, as well as the evaluation, providing certain references for the construction and teaching reform of food testing related courses.更多还原
