【摘要】 开展了虾青素对河蟹生长性能、色泽及其品质的影响试验。分别设置雌、雄2个试验组和雌雄2个对照组。试验组投喂含虾青素的饲料，对照组投喂普通商品饲料，6—8月连续投喂10 d/月。结果表明，在饲料中添加虾青素，可显著提高雄蟹肝胰腺的亮度、红色与黄色饱和度以及背甲的黄色保护度（P<0.05）；显著提高雌蟹背甲的亮度（P<0.05）；显著提高雄蟹的鲜味、甜味、肉香味、细嫩度、咀嚼性、黏附性和整体喜好性，减少氨味（P<0.05）；显著提高雌雄河蟹的过氧化氢酶与谷胱甘肽过氧化物酶含量（P<0.05），降低丙二醛含量（P<0.05）；降低雄蟹的超氧化物歧化酶含量（P<0.05），提高雌蟹的总抗氧化能力含量（P<0.05）。更多还原

【Abstract】 The effects of astaxanthin on growth performance, color and quality of Chinese mitten crab were studied. Two experimental groups of female and male and two control groups of female and male were set up respectively. The experimental group was fed with astaxanthin-containing feed, and the control group was fed with ordinary commodity feed, which was continuously fed for 10 d/month from June to August. The results showed that the addition of astaxanthin to the diet could significantly improve the brightness, red and yellow saturation of the hepatopancreas of male crabs and the yellow protection of the carapace(P<0.05). Significantly increased the bright ness of female crab carapace(P<0.05); the umami, sweetness, meat flavor, tenderness, chewiness, adhesion and overall preference of male crabs were significantly improved, and the ammonia flavor was reduced(P<0.05). The contents of catalase and glutathione peroxidase in male and female crabs were significantly increased(P<0.05), and the content of malondialdehyde was decreased(P<0.05). The content of superoxide dismutase in male crabs was decreased(P<0.05), and the total antioxidant capacity of female crabs was increased(P<0.05).更多还原
