不同品种枣抗氧化能力比较
Comparison of Antioxidant Capacity of Different Jujube Varieties
【摘要】 为比较不同品种枣的抗氧化能力，以灰枣、长红枣、圆铃枣、金丝小枣、新郑红枣和板枣为试验材料，对不同品种枣的含水率、可食率、总糖含量、总酚含量、还原能力和自由基清理能力进行了测定。结果表明，灰枣总体抗氧化能力较高，板枣次之，长红枣和圆铃枣抗氧化能力较低。
【Abstract】 In order to compare the antioxidant capacity of different jujube varieties,the water content,edible rate,total sugar content,total phenol content,reducing ability and free radical scavenging ability of different jujube varieties were determined.The results showed that the overall antioxidant capacity of Huizao was higher,followed by Banzao, and the antioxidant capacity of Changhongzao and Yuanlingzao was lower.
