黑果花楸果酒中活性成分的分析

【摘要】 采用GC-MS法和HPLC法分别测定黑果花楸果酒中挥发性和非挥发性成分。以乙醚-正戊烷(体积比1∶1)作为提取溶剂,采用液液萃取法提取样品中的挥发性成分,利用GC-MS法对其进行分析检测。样品中共检测出46种挥发性成分,其中酯类15种、醇类6种、酸类8种、芳香类化合物8种。采用HPLC法测定黑果花楸果酒的非挥发性成分,检测出原儿茶酸、新绿原酸、绿原酸、咖啡酸和槲皮素,其质量分数分别为73、152、67、92、101μg·g-1。

【Abstract】 GC-MS and HPLC methods were used to respectively determine the volatile and non-volatile components in Aronia melanocarpa fruit wine. Ether and n-pentane(volume ratio 1∶1) as the extraction solvent, the volatile components in the sample were extracted using liquid-liquid extraction method, and were analyzed by GC-MS method. A total of 46 volatile components were detected in the sample, including 15 kinds of esters, 6 kinds of alcohols, 8 kinds of acids and 8 kinds of aromatic compounds. HPLC method was used to determine the non-volatile components of sample. The mass fractions of protocatechuic acid, neochlorogenic acid,chlorogenic acid, caffeic acid and quercetin were 73,152,67,92,101 μg·g-1,respectively.
