【Abstract】 Dimethyl fumarate is widely used in food due to its effective mold prevention and preservation properties. However, excessive consumption of dimethyl fumarate could lead to health hazards and it has been included in the list of non-edible substances that may be illegally added to food in China. Despite its cheap price, dimethyl fumarate continues to be used, resulting in a series of food safety issues. With increasing concerns about food safety and health, dimethyl fumarate has drawn public attention, making the detection of its content in food critically important. The current research status of extraction methods and instrumental detection methods for dimethyl fumarate in food was was primarily discussed, providing a theoretical reference for the establishment of rapid determination methods in food.更多还原
