【摘要】 唐代随着水陆交通的发展和南北人口的流动与迁徙，中原地区与南方的饮食文化交流颇为频繁。中原地区对南方饮食文化的吸收主要表现为南方的大米、水产品、果品、饮品和调味品的大量输入。唐代前期中原饮食文化对南方影响较小，安史之乱后，北方人口大量南迁，使中原饮食文化对南方(特别是长江流域)产生了重要的影响。唐代中原地区与南方的饮食文化交流，不仅对南北方产生了不同程度的影响，而且加快了中国饮食文化的发展步伐。更多还原

【Abstract】 With the development of land and water transportation, mobility and migration of population from north to south, the food culture exchange between the Central Plains and the Southern area was quite frequent in the Tang Dynasty. The absorption of southern food culture in the Central Plains is mainly reflected in the large amount of rice, aquatic products, fruits, drinks and condiments imported from the South. In the early Tang Dynasty, the food culture of the Central Plains had little influence on the South. After the Anshi Rebellion, a large number of people from the north moved to the south, so that the diet culture of the Central Plains had an important influence on the South(especially the Yangtze River Valley). The communication of food culture between the Central Plains and the South in the Tang Dynasty not only affected the north and south to different degrees, but also accelerated the development of Chinese food culture.更多还原
