肌纤维类型影响牛肉品质相关指标的研究进展
Research Progress on The Influence of Muscle Fiber Types on Beef Quality Indexes
【摘要】 肌纤维是构成肌肉的基础单元,肌纤维类型是影响牛肉品质的重要因素。该文主要对肌纤维的特征和分类,肌纤维类型对pH、肉色、系水力、嫩度、风味氨基酸和肌内脂肪等肉品质指标的影响进行系统论述,以期为牛肉品质的综合评价及高品质牛肉的生产提供理论参考。
【Abstract】 Muscle fiber is the basic unit of muscle, and the type of muscle fiber is an important factor affecting the quality of beef. In this paper, the characteristics and classification of muscle fibers and the effects of muscle fiber types on meat quality indexes such as p H, meat color, water holding capacity, tenderness, flavoured amino acids and intramuscular fat were systematically discussed, in order to provide theoretical reference for the comprehensive evaluation of beef quality and the production of high-quality beef.
