谷物蛋白类α-淀粉酶抑制剂及其功能特性的研究进展
Cereal Protein Alpha-Amylase Inhibitors and Their Functional Properties
【摘要】 谷物是人类重要的食物,含有丰富的淀粉、蛋白质等营养物质,同时也是蛋白类α-淀粉酶抑制剂的良好来源。α-淀粉酶抑制剂(α-amylase inhibitor,α-AI)是一类具有抑制糖苷酶水解作用的物质,具有降血糖、降血脂、减肥及抗虫等作用,在医学与农业方面都有广泛的应用。该文对谷物中蛋白类α-AI的分离纯化、检测方法、功能特性等进行综述,并对其在食品及其它领域的应用前景进行展望。
【Abstract】 As important food for human beings,cereals are rich in nutrients such as starch and protein,and are also a good source of protein α-amylase inhibitors(α-AI). α-AI is a class of substance that inhibits glycoside hydrolase,with hypoglycemic,hypolipidemic,weight loss,and anthelmintic effects. Thus,it is widely used in medicine and agriculture. This paper reviewed the separation,purification,detection,and functional characteristics of α-AI in cereals,and prospected its application in food and other fields.
