机械活化乙酰化二淀粉已二酸酯的表征和性能分析

【摘要】 以木薯淀粉为原料、乙酸酐为酯化剂、已二酸为交联剂,在机械活化固相体系中制备乙酰化二淀粉已二酸酯。对酯化产品进行FTIR、XRD、SEM表征分析,结果显示,淀粉成功实现交联酯化;交联酯化不会改变淀粉的晶型,但会改变淀粉颗粒表面的形貌;机械活化使淀粉颗粒形状破坏,并破坏淀粉的结晶结构。机械活化交联酯化淀粉的抗老化性、抗剪切性较好,凝沉性、糊化温度降低,但是其透明度和冻融稳定性比原淀粉差,峰值黏度小,凝胶性弱。

【Abstract】 Cassava starch as the raw material, acetic anhydride as esterification agent, adipic acid as crosslinking agent,prepare acetylated distarch adipate in the mechanical activation of the solid phase system. Through the analysis of FTIR, XRD,SEM, the results show that starch realizes of crosslink and esterification; Crosslink esterification won’t change the crystal type of starch, but will change the morphology of the starch granule surface; Mechanical activation destroy the starch granule shape, and disrupt the crystalline structure of starch. Mechanical activation crosslink esterification starch has better aging resistance and shearing resistance, coagulation sink and gelatinization temperature reduce, but the transparency and freezethaw stability inferior compared to the original starch, with small peak viscosity is and weak gel.
