高抗氧化活性玉米醇溶蛋白短肽-黄色素复合物制备技术研究
Preparation Technology of High Antioxidant Zein Small Peptide-Yellow Pigment Complex
【摘要】 采用单因素试验及正交试验,提取玉米蛋白粉中的醇溶蛋白-黄色素复合物,确定最佳提取条件为温度70℃,时间180 min,乙醇体积分数75%,料液比1∶12,醇溶蛋白提取率60.73%,黄色素提取量0.37 mg/g玉米蛋白粉。采用不同蛋白酶酶解玉米醇溶蛋白-黄色素复合物,制备高抗氧化活性短肽-黄色素复合物,根据分子量分布和DPPH自由基清除率结果得出,经碱性蛋白酶和胰凝乳蛋白酶复合处理得到的玉米醇溶蛋白短肽-黄色素复合物,DPPH自由基清除率最高,达到84.10%。
【Abstract】 Extract the zein-yellow pigment in corn gluten meal by both single factor and orthogonal experiment,determine the optimum extraction conditions:temperature was 70 ℃,time 180 min,and ethanol volume fraction of 75%,material liquid ratio take 1 ∶12. The small peptide-yellow pigment complex was enzymatically digested by different proteases. The results showed that the DPPH clearance rate and molecular weight distribution of zein small peptide-yellow pigment complex obtained by alcalase and chymotrypsin was the highest,reaching 84.10%.
