纤维素酶辅助水提小黄姜活性成分工艺优化

【摘要】 对纤维素酶辅助水提小黄姜活性成分的工艺进行优化。在单因素试验的基础上,采用正交试验对提取工艺进行优化,得到最佳工艺条件为料液比1∶5(g/mL)、纤维素酶添加量3.0%(以小黄姜质量计)、酶解温度55℃、酶解时间110 min,在此条件下,水提液中姜辣素含量为(0.254±0.020)mg/mL,多糖含量为(33.548±0.431)mg/mL,黄酮含量为(0.335±0.021)mg/mL。

【Abstract】 The technology of cellulase assisted water extraction of active components from Zingiber officinale Roscoe was optimized. On the basis of single factor test, orthogonal test was used to optimize the extraction process, and the optimal process conditions were obtained as follows: solid-liquid ratio 1 ∶5(g/mL), cellulase addition 3.0 %(based on the mass of Zingiber officinale Roscoe), enzymolysis temperature 55 ℃, enzymolysis time 110 min. Under these conditions, the content of gingerol in the water extract was(0.254±0.020) mg/mL, the polysaccharide content was(33.548±0.431) mg/mL, and the flavonoid content was(0.335±0.021) mg/mL.
