高粱淀粉对多酚在消化过程中释放和抗氧化性的影响

【摘要】 通过体外胃肠消化法模拟高粱淀粉-多酚复合物和高粱多酚的消化过程,研究高粱淀粉在体外模拟消化过程中对多酚释放量及抗氧化性的影响。结果表明:随着消化时间的延长,高粱淀粉-多酚复合物的多酚释放量、抗氧化活性在小肠内总体呈上升趋势;在消化80 min时,高粱淀粉-多酚复合物的多酚释放量显著高于高粱多酚;表明高粱淀粉对高粱多酚具有保护作用,使更多的多酚在小肠内释放并发挥其功能活性。

【Abstract】 The digestive process of sorghum starch-polyphenol complex and sorghum polyphenol was simulated by in vitro gastrointestinal digestion, and the effect of sorghum starch on the release and antioxidant activity of polyphenols during in vitro simulated digestion process was studied. The results showed that with the prolongation of digestion time, the polyphenol release and antioxidant activity of sorghum starch-polyphenol complex showed an overall upward trend in the small intestine. At digestion 80 min, the release of polyphenols from sorghum starch-polyphenol complex was significantly higher than that of sorghum polyphenols. Sorghum starch had protective effect on sorghum polyphenol, allowing more polyphenols to be released in the small intestine and exerted their functional activity.
