富硒纳豆菌发酵鹰嘴豆产多肽及抗氧化性研究

【摘要】 对纳豆菌进行硒的富集,通过单因素和响应面试验,确定了富硒纳豆菌发酵鹰嘴豆产多肽的最佳发酵条件:接种量2%、发酵温度37℃、发酵时间33 h、液料比20∶1 (mL/g),在此条件下多肽含量为1.15 mg/mL,纳豆激酶活性为(40.56±0.19)FU/g,富硒培养能提高发酵液抗氧化能力。

【Abstract】 Selenium was enriched by Bacillus natto. Through single factor and response surface tests, the optimal fermentation conditions for the production of peptides from chickpea by selenium rich Bacillus natto were determined: inoculation amount 2 %, fermentation temperature 37 ℃, fermentation time 33 h, liquid material ratio 20 ∶1(mL/g). Under these conditions, the content of polypeptide was 1.15 mg/mL, and the activity of natto kinase was(40.56±0.19) FU/g. Selenium rich culture could improve the antioxidant capacity of fermentation broth.
