蓝莓果实品质分析与评价研究进展
Research Progress on Quality Analysis and Evaluation of Blueberry Fruit
【摘要】 蓝莓风味独特,营养丰富,广受消费者欢迎。蓝莓品质的优劣直接影响蓝莓的价格及加工形式,对蓝莓果实进行品质分析与评价是蓝莓产业发展过程中十分重要的环节。但目前蓝莓果实品质分析及评价指标较为混乱,尚未形成系统的品质评价体系,一定程度上制约着蓝莓产业健康发展。文中从蓝莓的感官、加工和理化营养品质3个方面综述了蓝莓果实品质分析的研究进展情况,并归纳了蓝莓果实品质综合评价的常用方法,以期为建立完善的蓝莓评价指标体系提供依据,为蓝莓良种选育、蓝莓产业优化提供参考。
【Abstract】 Blueberry is widely welcomed by consumers because it has unique flavor and rich nutrition. The quality of blueberries directly affects their price and processing form. Quality analysis and evaluation of blueberry fruits are very important links in the development of the blueberry industry. However, at present, the analysis and evaluation indicators of blueberry fruit quality are confused, and a systematic quality evaluation system has not been formed, which restricts the healthy development of blueberry industry to a certain extent. This paper summarized the research progress on quality analysis of blueberry fruit from three aspects of sensory, processing, physicochemical and nutritional quality. Summarized common methods of comprehensive quality evaluation of blueberry fruit, aiming to provide evidence for establishing a perfect blueberry evaluation index system, and provide references for blueberry breeding and blueberry industry optimization.
