【摘要】 农业与二三产业交叉融合发展是实现农业产业化的必由之路，也是乡村振兴战略的根本要求。一直以来，由于小农户经营分散、交易成本高等原因，餐饮企业与农户作为供求双方鲜有直接的合作。在农业规模化和餐饮连锁化的发展趋势下，餐饮企业与规模经营农户具备了直接合作的条件。在分析餐饮企业与规模经营农户的交易特征以及交易特征与合作效率关系的基础上，利用超效率DEA模型和结构方程模型研究二者的合作效率以及影响合作效率的因素。结果表明，与传统合作模式相比，连锁餐饮企业与规模经营农户合作的效率更高，农产品的特点及合作互动情况对合作效率具有显著的影响，合作情境对合作效率具有调节作用。最后根据研究结论从合作主体和政府政策层面给出乡村振兴战略背景下餐饮企业与规模经营农户合作的相关建议。更多还原

【Abstract】 The cross-integrated development of agriculture with secondary and tertiary industries is the only way to realize the industrialization of agriculture, and it is also the fundamental requirement of the rural revitalization strategy. For a long time, due to the fragmented operations of smallholder farming and high transaction costs, there has been little direct cooperation between catering companies and farmers, as both supply and demand parties. Under the development trend of agricultural scale-operation and the chainization of catering enterprises, enterprises and farmers have the conditions for direct cooperation. On the basis of analyzing the transaction characteristics of catering enterprises and scale-operation farmers, as well as the relationship between transaction characteristics and cooperation efficiency, the efficiency of cooperation between the two and the factors affecting cooperation efficiency are studied by means of the superefficiency DEA model and the structural equation model. The results show that compared with the traditional cooperation model, the efficiency of cooperation between chain catering enterprises and scale-operation farmers is higher. The characteristics of agricultural products and the situation of cooperative interaction have a significant impact on the cooperation efficiency, and the cooperation context has a moderating effect on cooperation efficiency.Finally, according to the research conclusions, the relevant suggestions are given on the cooperation between catering enterprises and scale-operation farmers under the background of rural revitalization strategy from the perspective of cooperation subjects and government policies.更多还原
