水稻直播栽培对稻米品质的影响

【摘要】 为了探明直播栽培方式下稻米品质特性,以插秧栽培方式为对照,通过对8个水稻品种(系)在保墒旱直播和播后上水两种不同直播栽培方式下的比较试验,研究其加工、外观、蒸煮食味及营养品质之间的差异。结果表明,加工品质方面,保墒旱直播和播后上水稻米的整精米率和出糙率与插秧稻米的整精米率和出糙率差异不显著;外观品质方面,参试材料的垩白粒率表现出插秧优于播后上水优于保墒旱直播,垩白度表现出插秧优于保墒旱直播优于播后上水,粒型在插秧、保墒旱直播、播后上水三种栽培方式间无明显差异;蒸煮食味品质方面,直链淀粉含量和胶稠度在保墒旱直播、播后上水和插秧三种栽培方式下差异不明显,碱消值在保墒旱直播条件下低于播后上水和插秧,播后上水和插秧间无明显差异;营养品质方面,蛋白质含量在播后上水条件下显著高于保墒旱直播和插秧栽培方式,保墒旱直播和插秧之间蛋白质含量差异不明显。由此可知,保墒旱直播和播后上水稻米的外观品质明显比插秧稻米差;播后上水稻米营养品质明显优于插秧,保墒旱直播与插秧无显著差异;在加工品质和蒸煮食味品质方面保墒旱直播、播后上水与插秧无显著差异。

【Abstract】 In order to ascertain the quality characteristics of rice under direct seeding cultivation mode, the comparative experiment of eight rice varieties(lines) under two different direct seeding cultivation methods: Soil moisture preservation and dry direct sowing, irrigation after sowing. The difference between processing, appearance, cooking taste and nutritional quality. The results showed that: In terms of processing quality, there was no significant difference between the whole milled rice rate and the roughness rate of the rice in the live-drying and post-sowing of the flood control and the whole milled rice rate and the roughness rate of the transplanted rice. There was no significant difference between the cultivation methods. The quality of cooking and eating, the amylose content and the gel consistency were not significantly different under the three cultivation methods: Soil moisture preservation and dry direct sowing, irrigation after sowing and transplanting. It can be seen that the appearance quality of rice after direct seeding and post-sowing is obviously worse than that of rice transplanted. The rice nutritional quality of irrigation after sowing is obviously better than that of soil moisture preservation and dry direct sowing. There is no significant difference between that three ways in terms of processing quality and cooking taste quality compared to transplanting.
