【摘要】 许多生物活性成分因其化学性质不稳定而降低了其生物利用度和功效。植物基纳米纤维素颗粒以其生物相容性、可再生性和经济性等特点在新型Pickering乳液的配方中表现出优异性能,且能作为包封和递送体系提高生物活性成分的稳定性和生物利用度。文章归纳总结了植物基纳米纤维素来源、分类和常用的制备方法,纳米纤维素稳定的食品级Pickering乳液类型及其作为递送体系对生物活性成分的包封和控制释放等方面的最新研究进展,根据纳米纤维素乳液在食品基质中的安全问题,提出今后需进一步完善纳米纤维素在体内的毒性研究,利用体内模型深入探讨纳米纤维素对结肠微生物区系和整体肠道健康的影响,开展纳米纤维素乳液对生物活性成分的释放机制,以及功能性乳液与真实食物系统的相容性和功效等理论与应用研究,为纤维素资源在食品领域中的应用提供参考。

【Abstract】 The chemical instability of many bioactive components reduces their bioavailability and efficacy. Plantbased nanocellulose particles exhibit excellent performance in the formulation of novel Pickering emulsions due to their biocompatibility,reproducibility and low cost,and can be used as encapsulation and delivery systems to improve the stability and bioavailability of bioactive component. The article summarizes the latest research progress in plant-based nanocellulose sources,classification,and commonly used preparation methods,types of nanocellulose-stabilized food-grade Pickering emulsions and their encapsulation and controlled release of bioactive components as delivery systems. According to the problems requiring further research on the safety of nano-cellulose emulsion in food matrix,it was proposed that the in vivo toxicity study of nano-cellulose should be further improved in the future,and use in vivo model to deeply explore the effect of nanocellulose on colonic microflora and overall intestinal health,carry out theoretical and applied research on the release mechanism of bioactive component from nanocellulose emulsions and the compatibility and efficacy of functional emulsions with real food systems. It is excepted that this review will provide references for the application of cellulose sources in food field.
