【摘要】 [目的]研究不同包装材料对冷藏后常温后熟期南果梨的感官品质及主要香气的影响。[方法]分别使用内衬PE保鲜袋的塑料周转箱、内衬牛皮纸袋的塑料周转箱、商业用瓦楞纸箱3种不同材料包装南果梨果实（冷藏90 d后），常温20℃下放置，测定品质及香气。[结果]果实失重率变化顺序为商业瓦楞纸箱﹥牛皮纸袋﹥PE袋，果实腐败及霉变率变化顺序为商业瓦楞纸箱﹥PE袋﹥牛皮纸袋；在后熟过程中PE袋和牛皮纸袋果实硬度较为相似，商业瓦楞纸箱果实硬度略高；在后熟过程中，牛皮纸袋和PE袋果实乙酸乙酯、丁酸乙酯、己酸乙酯、乙酸己酯相对含量变化较为相近；牛皮纸袋抑制了α-法尼烯的生成，在某种程度上抑制了南果梨类虎皮病的发生。[结论]牛皮纸袋在南果梨贮藏上的效果好，如能适当控制贮藏和后熟环境的湿度，控制失重率，牛皮纸袋的效果会更佳。更多还原

【Abstract】 [Objective] To study the effects of different packaging materials on the sensory quality and main aroma of Nanguo pear at room temperature after cold storage. [Method] Nanguo pear fruits were packaged with three different materials:plastic turnover box lined with PE fresh-keeping bag,plastic turnover box lined with kraft paper bag,and commercial corrugated box after 90 days of refrigeration stored at room temperature of20℃. The quality and aroma were determined. [Result] The change order of weight loss rate was commercial corrugated box fruit>kraft paper bag>PE bag,and the change order of decay and mildew rate was commercial corrugated box fruit >PE bag >kraft paper bag; In the post-ripening process,the fruit hardness of PE bag and kraft paper bag is relatively similar,and the fruit hardness of commercial corrugated box is slightly higher;During the ripening process,the relative contents of ethyl acetate,ethyl butyrate,ethyl caproate and hexyl acetate in kraft paper bags and PE bags were similar. But the kraft paper bag suppressed α-farnesene,to a certain extent,inhibited the occurrence of tiger skin disease of Nanguo pear. [Conclusion] The effect of kraft paper bag on storage of Nanguo pear is better than that of PE bag and commercial corrugated box. If the humidity of storage and ripening environment can be properly controlled and the weight loss rate can be controlled,the effect of kraft paper bag will be better.更多还原
