丁酸梭菌对畜禽抗氧化能力和产品品质影响的研究进展

【摘要】 丁酸梭菌是存在于人和畜禽肠道中的一种严格厌氧梭状芽孢杆菌,该菌可发酵碳水化合物产生丁酸、乙酸和氢气等代谢产物,具有耐高温、耐胃酸和耐胆盐等抗逆特性,其在改善畜禽肠道健康方面具有重要作用。近年来,研究表明丁酸梭菌还具有提高畜禽抗氧化能力和改善产品品质的作用。本文综述了丁酸梭菌对畜禽抗氧化能力和产品品质影响的研究进展,为丁酸梭菌的进一步研究及新功能的开发应用提供参考。

【Abstract】 Clostridium butyricum is a strictly anaerobic clostridium present in the intestines of human as well as livestock and poultry, which can ferment carbohydrates to produce metabolites such as butyric acid, acetic acid and hydrogen, and has resistance to high temperature, gastric acid and bile salts. It plays an important role in improving the intestinal health of livestock and poultry. Recently, many studies have demonstrated that Clostridium butyricum could also increase antioxidant capacity and improve product quality. Therefore, this paper mainly reviews the research progress of Clostridium butyricum in regulating the antioxidant capacity and product quality of livestock and poultry, so as to provide reference for further research and development and application of new functions of Clostridium butyricum.
