不同生长周期青稞苗粉氨基酸、脂肪酸组成分析及抗氧化性研究
Amino Acid and Fatty Acid Composition and Total Antioxidant Capacity of Highland Barley Seedling Powder Obtained from Seedlings Grown for Different Periods
【摘要】 以青稞苗为研究对象,通过热风干燥、粉碎等工艺制成青稞苗粉(highland barley seedling powder,HBSP),对不同生长周期样品氨基酸、脂肪酸的组成与含量及总抗氧化能力(total antioxidant capacity,T-AOC)进行测定。结果表明,必需氨基酸赖氨酸、亮氨酸含量为0.48 g/100 g~1.34 g/100 g、0.80 g/100 g~1.54 g/100 g,γ-氨基丁酸含量为0.93 g/100 g~3.12 g/100 g。ω-3多不饱和脂肪酸含量为238.00 mg/100 g~1 910.00 mg/100 g,参测样品的总抗氧化能力依次为12 d HBSP>10 d HBSP>5 d HBSP>3 d HBSP。综合对比氨基酸、脂肪酸的组成及含量,可得出青稞苗粉最佳生长周期为10日龄。
【Abstract】 Highland barley seedlings processed into highland barley seedling powder(HBSP)by hot air drying,crushing,and other processes were investigated. The composition and content of amino acids and fatty acids were determined,in addition to the total antioxidant capacity of HBSP samples obtained from seedlings grown for different periods. The content of lysine and leucine,which are essential amino acids,was 0.48 g/100 g-1.34 g/100 g and 0.80 g/100 g-1.54 g/100 g,respectively. The content of γ-aminobutyric acid was 0.93 g/100 g-3.12 g/100 g. The concentration of omega-3 polyunsaturated fatty acid ranged from 238.00 mg/100 g-1 910.00 mg/100 g.The total antioxidant capacity of the tested samples decreased in the following order:12 d HBSP > 10 d HBSP >5 d HBSP > 3 d HBSP. Comprehensive comparison of the composition and content of amino acids and fatty acids in the HBSP samples revealed that the best growth period for the seedlings was 10 d.
