野生与栽培中国美味蘑菇子实体营养成分比对分析与评价

【摘要】 为更好地认识野生与栽培中国美味蘑菇(Agaricus sinodeliciosus)子实体之间各类营养成分的差别,对两种中国美味蘑菇子实体中多种营养成分进行检测,以氨基酸评分(AAS)、蛋白完全性分析(IOM)、化学评分(CS)、氨基酸比值系数(RC)、氨基酸比值系数分(SRC)、必需氨基酸指数(EAAI)和蛋白质校正氨基酸计分(PDCAAS)等参数为指标,分析野生与栽培中国美味蘑菇子实体中的氨基酸特性和蛋白质营养价值。结果表明:栽培中国美味蘑菇子实体中粗蛋白、灰分、总膳食纤维、总维生素和总矿质元素的含量比野生中国美味蘑菇子实体含量高,仅粗脂肪和碳水化合物含量比野生中国美味蘑菇子实体含量低。栽培中国美味蘑菇子实体中除药用氨基酸和赖氨酸等少数氨基酸外,多数氨基酸的参数评分优于野生中国美味蘑菇子实体,且鲜味和甜味氨基酸含量高。另外,野生与栽培中国美味蘑菇子实体蛋白的必需氨基酸总含量均高于WHO∕FAO∕UNU模式谱(256 mg∕g)和IOM模式谱(262 mg∕g),第一限制氨基酸都是蛋氨酸+半胱氨酸。

【Abstract】 In order to better understand the differences of nutritions in fruit bodies of wild and cultivated Agaricus sinodeliciosus,various nutritions in fruit bodies of the two kinds ofA. sinodeliciosuswere detected. Amino acid characteristics and protein nutritional value in fruit bodies of wild and cultivatedA. sinodeliciosuswere analyzed by taking amino acid score(AAS),IOM pattern score(IOM),chemical score(CS),ratio coefficient of amino acid(RC),score of ratio coefficient of amino acid( SRC),essential amino acid index( EAAI),protein digestibility corrected amino acids score(PDCAAS) as indicators. The results showed that crude protein content,ash content,total dietary fiber content,total vitamin content and total mineral element content in the fruit body of cultivatedA. sinodeliciosuswere higher than those of wildA. sinodeliciosus,but crude fat content and carbohydrate content were lower than those of wildA. sinodeliciosus. In the fruit body of cultivatedA. sinodeliciosus,except for a few amino acids such as medicinal amino acids and lysine,the parameter scores of most amino acids were better than those of the fruit body of wildA. sinodeliciosus,and delicious amino acids content and sweet amino acids content were high. In addition,the total content of essential amino acids in the fruit body protein of wild and cultivatedA. sinodeliciosuswas higher than WHO∕FAO∕UNU model spectrum(256 mg∕g) and IOM model spectrum(262 mg∕g),and the first limiting amino acid was methionine + cysteine.
