大豆多酚衍生物的抗氧化活性研究
Antioxidant Activities of Polyphenol Derivatives from Soybean
【摘要】 染料木素与苯磺酸发生酯化反应得到染料木素-7-苯磺酸酯。利用DPPH自由基、超氧阴离子自由基、羟自由基、总还原力以及总抗氧化活性测定大豆多酚染料木素(GE)及其衍生物染料木素-7-苯磺酸酯(GB)的抗氧化活性,结果表明GE和GB均具有一定抗氧化活性,且呈量效关系,清除羟基自由基的能力为:GB>GE>Vc。
【Abstract】 Genistein-7-benzosulfonate was obtained by esterification of genistein and benzosulfonic acid. The antioxidant activities of soy polyphenol genistein(GE) and its derivative Genistein-7-benzosulfonate(GB) were determined using DPPH radical, Superoxide anion radical, hydroxyl radical, total reducing power as well as total antioxidant activity. The results showed that both GE and GB1 had some antioxidant activity with a dose-effect relationship, and the ability to scavenge hydroxyl radicals was as follows: GB1>GE>Vc.
