利用电子鼻评价树莓果实香气
Evaluation of aroma in raspberry fruit by electronic nose
【摘要】 树莓是一种富含香气物质的小浆果,电子鼻法可无损快速分析果实香气物质。利用电子鼻PEN 3.5系统检测36个不同品种及同一品种不同发育时期树莓果实香气物质,采用主成分分析法(PCA)、线性判别分析法(LDA)和传感器区分贡献率法(LO)分析树莓果实香气物质。PCA分析表明,不同树莓品种在香气物质含量及组成之间存在较大差异;LDA分析可区分不同结果类型、发育时期树莓果实香气,从而区分不同颜色树莓果实香气成分;LO分析结果表明,传感器贡献率高低依次为W1S传感器(烷类化合物)、W2S传感器(检测醇和部分芳香族化合物)、W3C传感器(烷类和脂肪族)和W6S传感器(氢化物);果实成熟期前,香气物质含量显著增加,芳烃化合物、氨及芳香分子、烷类、检测醇及部分芳香族化合物、烯烃及芳族和极性分子增加尤为明显。结果表明,利用电子鼻法可区别不同成熟度树莓果实,用于树莓果实种质资源香气评价。研究为树莓香气研究增加快速简便方法,为其他树种果实香气评价提供借鉴。
【Abstract】 Raspberry is a kind of small berries with multiple aroma substances. Electronic nose can analyze quickly and nondestructively. In this study, the electronic nose PEN3.5 system was used to detect the aroma substances in fruits of different development stages and 36 different types of raspberry varieties, and PCA, LDA and LO were used to analyz the results. The PCA analysis showed that there were great differences in the content and composition of aroma substances among different raspberry varieties. LDA analysis was used to distinguish the aroma substances in fruits of different fruiting types and at different fruit development stages of raspberry varieties, and distinguish the aroma of raspberry fruits with different colors roughly. Based on the LO analysis, the sensor W1S(alkanes),W2S(detection of alcohols and some aromatic compounds), W3C(ammonia, aromatic molecules) and W6S(hydrides) played important roles in the evaluation of aroma in raspberry fruits. Aromatic compounds, ammonia and aromatic molecules, alkanes, detection alcohols and some aromatic compounds, olefins, aromatic and polar molecules increased significantly before fruit ripening. The research showed that electronic nose could distinguish raspberry fruits with different maturities and could be used for raspberry fruit germplasm resource aroma evaluation. This study added a fast and simple method to the study of raspberry aroma, and also had a certain reference for the evaluation of fruit aroma of other tree species.
