【摘要】 本文系统梳理了2000—2021年国内外红茶相关的研究文献，利用Citespace软件为基础的文献计量学方法挖掘红茶研究热点，客观分析不同国家（地区）、机构和作者在红茶研究中的影响力。结果表明，红茶研究论文最多的国家依次是中国、美国和印度，其中美国对红茶研究的贡献最大；在红茶研究领域，中国农业科学院的中文和英文发文量都是世界第一；刘仲华和宛晓春是国内外红茶研究的引领者，发文量分别为81篇和40篇。红茶研究的发文量逐年增加显示红茶相关研究越来越受重视；从关键词来看，品质、茶黄素、香气、抗氧化活性、消费和咖啡因等是当前的研究热点。未来红茶研究的趋势仍是红茶的品质特征代谢物和健康功效。更多还原

【Abstract】 This paper systematically sorts out the domestic and foreign research literature of black tea from 2000 to 2021.The bibliometric method based on Citespace software was used to mine the research hotspots of black tea,which objectively reflects the influence of different countries (regions),institutions and authors in black tea research.The results showed that the countries with the most research on black tea are China,the United States of America and India.And the United States contributes the most valuable research to black tea,the Chinese Academy of Agricultural Sciences ranks first in the world in the field of black tea research in both Chinese and English publications.In addition,Liu Zhonghua and Wan Xiaochunare leaders in black tea research,and published 81 and 40 papers,respectively.The publications related to black tea subject has been increased year by year.Quality,theaflavins,aroma,antioxidant activity,consumption and caffeine are the frequently keywords for investigation.The characteristic metabolites and health effects of black tea should be hot fields for future research.更多还原
