市售梨膏产品调研及品质分析

【摘要】 对市售27个梨膏产品的名称、品牌、价格、规格、配料、包装材料、外包装情况、品质分析及感官评价进行了研究。结果表明,市售梨膏价格在中低区间占比较高,单价在低区间占比较高,并且发现单价与价格、规格呈极显著相关(P<0.01);有11个梨膏的配料添加了中药,且以药食同源的中药为主,部分梨膏产品添加了普通食品;甜味剂的选择以蜂蜜、冰糖、白砂糖和麦芽糖为主;梨膏水溶液的可溶性固形物含量(SSC)差异不大,平均值为13.4%,而可滴定酸(TA)含量差异较大,变异系数为80.03%,跨度从0.014%到0.244%;褐变指数在0.497~1.680之间,变异系数为26.25%,存在一定的差异;透光率平均值为46.64%,变异系数为63.73%,差异较大;根据色泽、口感、气味和组织状态对梨膏产品进行感官评价,LG01、LG02、LG03和LG26梨膏感官品质较优,LG08、LG09、LG13、LG15、LG16、LG19和LG25梨膏较差;相关性分析结果显示,颜色越深梨膏SSC和TA含量越高,SSC越高梨膏越不清亮,但是整体感官评价越低。

【Abstract】 The names, brands, prices, specifications, ingredients, packaging materials, external packaging, qualities analysis and sensory evaluation of 27 pear ointment products in the market were studied. The results showed that the market prices of pear ointments accounted for high proportion in the middle and low range, unit prices were relatively high in the low range, and the unit prices were significantly correlated with the prices and specifications(P<0.01). The ingredients of 11 pear ointments were added with traditional Chinese medicine, and the traditional Chinese medicine with same origin of medicine and food were mainly used, and some pear ointments were added with ordinary foods. The sweeteners were mainly honey, rock sugar, granulated sugar and maltose. The soluble solid contents(SSC) of aqueous solution of pear ointments showed little difference with an average value of 13.4%,while the titratable acid(TA) contents showed great difference with a variation coefficient of 80.03%, ranging from 0.014% to 0.244%. The browning indices ranged from 0.497 to 1.680, and the variation coefficient was 26.25%,showing some differences. The mean transmittance was 46.64%, and the coefficient of variation was 63.73%, presenting great differences. According to the color, tastes, odor and tissue states, the sensory evaluation of the pear ointment products showed that the sensory qualities of LG01, LG02, LG03 and LG26 were better than that of LG08, LG09,LG13, LG15, LG16, LG19 and LG25. Correlation analysis showed that the darker the color, the higher the SSC and TA contents; the higher the SSC, the muddier the pear ointments, while the lower the overall sensory evaluation.
