高粱蜀黍苷的研究进展

【摘要】 生氰糖苷是农产品中广泛存在的内源性物质,在植物中具有化学防御功能,在抵抗病虫害方面有重要作用。高粱中的生氰糖苷是蜀黍苷,当其被分解后产生氢氰酸,严重威胁人类和动物的健康甚至生命。本文对高粱中蜀黍苷的定量、代谢调控和脱毒的可能方法等进行了综述,并对高粱中蜀黍苷的脱毒措施提出展望,为降解高粱中蜀黍苷的研究提供参考。

【Abstract】 Cyanogen glycosides are endogenous substances that widely exist in agricultural products. They have chemical defense function in plants and play an important role in resisting pests and diseases.The cyanogen glycoside in sorghum is dhurrin, when it is decomposed, hydrocyanic acid will be generated, which seriouly threats to human and animal health and even life.In the present paper, the quantification, metabolism regulation and possible methods of detoxification of dhurrin in sorghum were reviewed, and the prospect of detoxification measures of dhurrin in sorghum was put forward, which provided reference for the study on the degradation of dhurrin in sorghum.
