不同贮藏条件下马铃薯淀粉酶活性变化分析

【摘要】 在晋北地区种植36个马铃薯品种,测定了不同贮藏条件下淀粉酶活性,旨在探讨不同贮藏条件下马铃薯淀粉酶活性的变化规律,进一步明确马铃薯最佳的贮藏方式。结果表明,不同品种马铃薯淀粉酶活性在收获初期不同,475活性最高,V3最低;贮藏60 d后,马铃薯淀粉酶活性均显著增加,但10℃贮藏下的淀粉酶活性变化显著低于20℃;短期贮藏马铃薯可选择10℃贮藏。冀张薯12号在贮藏期间,淀粉酶活性增加幅度最小,属于耐贮藏品种。

【Abstract】 Thirty-six potato varieties were planted in the north of Shanxi province, the amylase activity of potato under different storage conditions was measured, and the difference and the changing trend were analyzed, to further define the best storage method of potato. The results showed that the amylase activity of different potato varieties was different at the beginning of harvest, the amylase activity of 475 was the highest and the amylase activity of V3 was the lowest. After 60 d storage, the amylase activity of potato increased significantly, but the change of amylase activity at 10 ℃ was significantly lower than that at 20 ℃, and potato could be stored at 10 ℃ for short time. During storage, the amylase activity of Jizhangshu 12 increased the least, and it could be used as a storable variety.
