牡丹籽蛋白提取工艺及其多肽应用研究进展

【摘要】 油用牡丹在油脂榨取过程中产生了大量的副产物籽粕,其利用率极低,会造成资源浪费与环境污染。籽粕中的蛋白质不但营养价值高,具有良好的起泡性、持水性,其水解多肽还具有抗氧化、降血压、降血糖等功效。牡丹籽蛋白提取工艺有碱溶酸沉法、盐溶法、酶解法等,其中碱溶酸沉法与酶解法的应用最广泛,而采用超声波辅助的制备方法能够提高蛋白质的提取率。本文阐述了牡丹籽蛋白的提取工艺与其水解多肽的功能活性,为其进一步研究和利用牡丹籽粕提供参考依据。

【Abstract】 Oil peony produces a large amount of by-product seed meal during oil extraction process, and its utilization rate is extremely low, resulting in resource waste and environmental pollution. The proteins in seed meal not only have high nutritional value, but also have good foaming and water holding properties. The hydrolyzed polypeptides also have antioxidant,lower blood pressure, lower blood sugar and other effects. The extraction process of peony seed protein includes alkaline solution acid precipitation method, salt solution method, enzymatic hydrolysis method, etc. Among them, alkali-soluble acid precipitation and enzymatic hydrolysis are the most widely used, and ultrasonic-assisted preparation method can improve the extraction rate of proteins. This article describes the extraction process of peony seed protein and the functional activity of its hydrolyzed peptides,and provides a reference for its further research and utilization of peony seed meal.
