食品和饲料中霉菌毒素污染及生物降解方法

【摘要】 从动物消化道、土壤和其他来源分离的发酵食品或饲料中常见的微生物证实了微生物是适用于霉菌毒素降解的主要生物。但迄今为止取得的成果可能只是可实际应用技术的第一步,因为大多数研究是在实验室条件下进行的。在许多情况下,培养物和微生物混合通常不是食品或饲料中微生物区系的一部分,因此不具备应用性。动物消化道中存在的霉菌毒素降解微生物的活性可能会增加,它们可能被用于体内降解霉菌毒素或作为益生菌。因此,本文综述了食品和饲料中霉菌毒素污染及生物降解方法,从经济角度出发,为开发和控制霉菌毒素污染提供理论依据。

【Abstract】 Microorganisms commonly found in fermented foods or feeds isolated from animal digestive tracts,soil,and other sources support the view that microorganisms are the primary organisms suitable for mycotoxin degradation. However,the results achieved so far may be only a first step towards developing practical,commercially applicable technologies,since most research is carried out in model systems under laboratory conditions. In many cases,cultures are mixed with microorganisms that are usually not part of the microbiota in food or feed and are therefore not applicable. Based on the presence of mycotoxindegrading microorganisms in the digestive tract of animals,the activity of these microorganisms may be increased and they may be used to degrade mycotoxins in vivo or as probiotics. Therefore,this paper reviewed the methods of mycotoxin contamination and biodegradation in food and feed,and provided theoretical basis for the development and control of mycotoxin contamination from the economic point of view.
