羊乳制品中掺杂牛乳鉴别技术研究进展

【摘要】 概述了目前应用于羊乳及羊乳制品掺假检测方法的基本原理及其研究进展,包括基于牛抗原特异性实现的ELISA技术、基于DNA的聚合酶链式反应技术、基于乳源蛋白荷质比差异的电泳技术、基于蛋白组学和甘油三酯组成的色谱和质谱技术。同时从方法准确性、可靠性、检测效率以及方法适用性和经济性等方面比较了各类检测方法的优缺点,期望为羊乳及其制品掺假鉴别提供参考和依据,为进一步完善乳制品安全检测技术体系和保障乳制品市场的规范性提供参考。

【Abstract】 This review describes the basic principles and application of method currently available for goat milk and product adulteration detection, including bovine antigen specificity-based ELISA, DNA-based polymerase chain reaction, charge mass ratio of milk protein-based electrophoretic, andproteomics and triglyceride composition-based chromatographic andmassspectrometry technologies. The advantages and disadvantages of these detection technologies were compared from the aspects of accuracy, reliability, detection efficiency,applicabilityand economy. We expected that this review will provide a theoretical basis for adulteration identification of goat milk and goat milk products.
