有色稻抗氧化作用及其与花色苷和类黄酮含量的关系

【摘要】 通过测定有色稻资源的花色苷和类黄酮含量、羟自由基清除能力和总抗氧化能力,分析其种皮颜色差异与花色苷和类黄酮含量、抗氧化作用的相关性以及抗氧化作用与花色苷和类黄酮含量之间的相关性。结果表明,黑米的总抗氧化能力、羟自由基清除能力、花色苷和类黄酮含量总体高于紫米,差异达极显著水平;有色稻的总抗氧化能力和羟自由基清除能力与花色苷和类黄酮含量之间均呈现极显著正相关,表明有色稻的种皮颜色越深,花色苷含量越高,抗氧化作用越强。研究结果不仅为高抗氧化有色稻品种的筛选奠定了理论依据,还为高抗氧化水稻遗传育种提供了优异的种质资源。

【Abstract】 The anthocyanin and flavonoid content, scavenging free radical capacity(SFRC) and total antioxidation capacity(TAC) of colored rice resources were detected, and the correlation between the color difference of the seed coat and the contents of anthocyanin and flavonoids and antioxidation, and the correlation between the antioxidation and the contents of anthocyanin and flavonoids were analyzed. The results showed that the brown rice is higher in TAC, SFRC and the contents of anthocyanin and flavonoid than the purple rice, with highly significant difference. The TAC and SFRC of the colored rice showed a significantly positive correlation with the contents of anthocyanin and flavonoids, respectively, indicating that the darker rice has higher anthocyanin content, and higher anti-oxidation effect. The study not only sets up the theoretical basis for screening highly antioxidating colored rice varieties, but also provides excellent germplasm resources for genetic breeding of highly antioxidating rice.
