功能性乳酸菌在食品中的应用及展望
Application and prospect of functional lactic acid bacteria in food
【摘要】 对乳酸菌的生理功能和在食品工业中的应用进行综述及展望,为乳酸菌在食品工业中的应用提供理论参考。
【Abstract】 The physiological functions of lactic acid bacteria and their applications in the food industry were reviewed and prospected to provide a theoretical reference for the application of lactic acid bacteria in the food industry.
