油茶籽油氧化稳定性研究进展
Research Progress in Oxidation Stability of Camellia Oil
【摘要】 油茶籽毛油富含不饱和脂肪酸,且含有维生素、植物甾醇、多酚类等多种活性物质,其氧化稳定性较好。在经过精炼加工后,油茶籽毛油活性物质损失较大,氧化稳定性大幅下降。在贮藏期间,油茶籽油易受氧、光照、温度、金属离子、微生物等因素的影响而导致氧化速度加快,如果贮藏不当,更易氧化。为减缓油茶籽油氧化速度、提高其氧化稳定性、延长贮藏货架期,众多学者开展了大量研究,包括探索加工工艺、储存容器材质的选择、最适合的贮藏条件、研发利用各种抗氧化剂等。因此,从油茶籽油的特性、影响抗氧化性能的因素、各种抗氧化剂的应用等方面,综述了提升油茶籽油抗氧化性能的研究进展,展望了今后油茶籽油氧化稳定性研究方向。
【Abstract】 Camellia oil is rich in unsaturated fatty acids and contains many active substances such as vitamins, phytosterols and polyphenols. After refining, the loss of active substances of camellia seed oil was great and oxidation stability decreased. During storage, camellia oil is susceptible to oxygen, light, temperature, metal ions, microorganisms and other factors, leading to accelerated oxidation rate. If improperly stored, camellia oil is more prone to oxidation. In order to slow down the oxidation speed of camellia oil, improve its oxidation stability and prolong the shelf life of storage, many scholars have carried out a lot of studies including exploring the processing technology, selection of storage container materials, the most suitable storage conditions, research and development of various antioxidants. In this paper, the research progress in improving the antioxidant properties of camellia oil was reviewed from the aspects of its characteristics, the factors that affect its antioxidant properties and the application of various antioxidants. The research direction of oxidation stability of camellia seed oil in the future was prospected.
