不同饲养模式对嘉积鸭肌肉品质的影响

【摘要】 为了研究不同饲养模式(传统饲料+放养、传统饲料+网床饲养、商业饲料+网床饲养、自制饲料+网床饲养)对嘉积鸭肌肉品质的影响,将1 200只1周龄嘉积鸭随机分为4组,每组设3个重复,13周龄末结束试验。对比4种模式下嘉积鸭的肉质物理指标、营养成分以及感官评分等。结果表明:(1)传统饲料+放养模式嘉积鸭胸肌氨基酸总量显著高于商业饲料+网床饲养模式(P<0.05),腿肌氨基酸含量差异不显著(P>0.05);(2)自制饲料+网床饲养模式嘉积鸭胸肌内肌苷酸含量极显著高于传统饲料+放养和商业饲料+网床饲养模式(P<0.01)、显著高于传统饲料+网床饲养模式(P<0.05),腿肌中则是商业饲料+网床饲养模式极显著高于自制饲料+网床饲养模式(P<0.01)、显著高于传统饲料+网床饲养模式(P<0.05);(3)自制饲料+网床饲养模式胸肌内脂肪含量极显著高于传统饲料+放养和商业饲料+网床饲养模式(P<0.01)、显著高于传统饲料+放养模式(P<0.05),自制饲料+网床饲养模式腿肌内脂肪含量极显著高于商业饲料+网床饲养模式(P<0.01)、显著高于传统饲料+放养和传统饲料+网床饲养模式(P<0.05),其余营养成分指标差异不显著(P>0.05);(4)感官评分方面,由高到低分别为传统饲料+放养、自制饲料+网床饲养、传统饲料+网床饲养和商业饲料+网床饲养模式。综合以上结果可以得出:自制饲料+网床饲养模式能够显著提高嘉积鸭胸肌内风味物质肌苷酸含量以及胸肌和腿肌内脂肪含量,但不降低肉质综合风味,可以确定为嘉积鸭的最佳饲养模式。

【Abstract】 There are four feeding models in feeding ducks, traditional feed+stocking(T+S),traditional feed + net bed feeding(T+N), commercial feed+net bed feeding(C+N), homemade feed+net bed Feeding mode(H+N). To explore the effects of 4 different feeding modes on the muscle quality of Jiaji duck, 1200 1-week old Jiaji ducks were randomly divided into 4 groups with 3 replicates for each group, and were fed the four types of feed till 13-weeks of age. The meat physical indicators, nutrients, and tasting scores of Jiaji duck under the four modes were compared. The results showed that:(1) The total amino acid content in breast muscle were significantly different between T+ S and C + N(P<0.05), while the amino acid contents in leg muscle were not significantly different in the four modes.(2) The inosinic acid content in breast muscle of H+N was extremely higher than that of T+S and C+N(P<0.01), significantly higher than that of T+N(P<0.05); the inosinic acid content in leg muscle of C+N was extremely higher than that of H+N(P<0.01), significantly higher than that of T+N(P<0.05).(3) The intramuscular fat content in breast muscle of H+N was extremely higher than that of T+S and C+N(P<0.01), significantly higher than that of T+S(P<0.05); the intramuscular fat content in leg muscle of H+N was extremely higher than that of T+S and C+N(P<0.01), significantly higher than that of T+S and T+N(P<0.05).(4) The order of four feeding modes in tasting scores from high to low was T+S, H+N, T+N, and C+N. Based on the results provided here, it can be concluded that the H+N mode can increase the inosinic acid content in breast muscle, and the intramuscular fat content in breast muscle and leg muscle without decreasing the flavor of muscle. Therefore, H+N is the best feeding mode for Jiaji ducks.
