水培蔬菜与土培蔬菜营养成分的差异分析
Differential Analysis of Nutrient Composition between Hydroponic Vegetables and Soil Cultured Vegetables
【摘要】 为研究水培蔬菜与土培蔬菜中营养成分差异及各成分间的相关关系,以芹菜、菜心、意大利生菜、上海青和油麦菜5种常见蔬菜为试材,测定了蔬菜中有机酸、膳食纤维、蛋白质等7种主要成分的含量,并对各营养成分的相关性进行了分析.研究发现:水培蔬菜中的可溶性糖、维生素C、膳食纤维和铜的含量显著低于土培蔬菜,水分、铁、钙、铝、磷、镁、钠和硼的含量显著高于土培蔬菜;锰、硼、铁、钙、镁、磷等含量与水培蔬菜营养成分呈现正相关关系,铝和钠则呈现负相关,土培蔬菜中铁、钙、铜等元素含量与各营养成分也呈现正相关关系.该研究结果对于不同栽培方式下蔬菜的精准施肥和如何提高蔬菜综合品质具有理论指导意义.
【Abstract】 The purpose of this study is to analyze the difference of nutrient components between hydroponic vegetables and soil cultured vegetables and the correlation between them. With celery,Chinese cabbage,Italian lettuce,Shanghai green and lettuce as test materials,the contents of seven main components in vegetables,such as organic acids,dietary fiber and proteins,were determined. The results showed that the contents of soluble sugar,vitamin C,dietary fiber and copper in hydroponic vegetables were significantly lower than those in soil cultured vegetables,while the contents of water,iron,calcium,aluminum,phosphorus,magnesium,sodium and boron were significantly higher than those in soil cultured vegetables. The contents of Mn,B,Fe,Ca,Mg and P were positively correlated with the nutrient components of hydroponic vegetables,while Al and Na were negatively correlated. There was also a positive correlation between Fe,Ca,Cu and other nutrients in soil cultured vegetables. The study have theoretical significance for precise fertilization in different vegetable cultivation mode and for improving the comprehensive quality of vegetables.
