地沟油的波谱检测技术

【摘要】 地沟油鉴别时当今国内食品安全领域研究的热点之一。由于缺乏系统的国家或行业鉴别标准和方法,"地沟油"事件时有报道,严重威胁了食品安全和人体健康。加强地沟油监管,对地沟油与食用油进行准确区分,势在必行。本文对几种常见的波谱技术在鉴别地沟油方面的应用情况和不足之处进行了总结和分析,其中拉曼光谱、核磁共振和太赫兹技术,均具有较高的灵敏度和准确度,应是今后发展的方向。

【Abstract】 The identification of gutter oil is one of the hot spots in the field of food safety in China. Due to the lack of systematic identification standards and methods of nation or industry, “Gutter oil” incident has been occasionally reported, its seriously threatened food safety and human health. Many spectral methods were summarized, its application and disadvantage in gutter oil were elaborated. These methods, such as Raman spectrum, nuclear magnetic resonance(NMR), terahertz, and so on, should be the developmental technology because of its high sensitivity and accuracy in oil detection.
