食醋的功效成分和危害物质
Functional Components and Harmful Substances of Vinegar
【摘要】 食醋中含有多种功效成分,赋予食醋独特的风味和营养保健功能,同时食醋在酿造过程中会产生对人体不利的危害物质。文章综述了食醋的功效成分与危害物质的研究进展。
【Abstract】 Vinegar contains various functional components,which endow it with unique flavor,nutrition and health care functions.At the same time,vinegar will produce harmful substances to the human in the brewing process.The research progress on the functional components and harmful substances of vinegar are reviewed in this paper.
