【摘要】 对中华绒螯蟹(Eriocheir sisensis H.,俗称河蟹)产业现状及产品质量概况进行了阐述,并分析了其近十年来质量安全状况的前后变化。文章通过对河蟹全产业链的质量安全风险排查研究,分析了河蟹产业各环节中存在的质量安全隐患和主要安全问题。最后,针对河蟹产业及产品的质量安全问题,提出管理控制措施和监管政策,并对需要重点研究解决的质量安全问题提出了切实有效的建议,对突发性的事件提供了应急预案,为中国河蟹产业的健康可持续发展提供保障。[中国渔业质量与标准,2020,10(1):13-28]更多还原

【Abstract】 In this paper, the current situation of the Chinese mitten crab industry and the general situation of its quality were described, and the changes of its quality and safety in the recent ten years were analyzed. Through the investigation on the quality and safety risk in the whole industrial chain of river crab, this paper analyzed the potential risk of the quality and safety as well as the main safety problems in each link of the river crab industry. Finally, in view of the quality and safety problems of river crab industry and the related products, several management measures and supervision policies were put forward. Besides, the practical and effective suggestions were put forward for solving the main quality and safety problems, and the emergency plans were provided for unexpected events, so as to guarantee the healthy and sustainable development of the river crab industry in China.
