葡萄转色期乙醇处理对其成熟特性及内源激素含量的影响

【摘要】 以‘红地球’葡萄为试材,经1%氯化钙(CaCl2)、15%乙醇(EtOH)中溶入1%氯化钙(CaCl2)和15%乙醇(EtOH)处理后,检测乙醇处理对葡萄转色期果实成熟特性及葡萄果肉、种子和果皮中脱落酸(ABA)、生长素(IAA)、赤霉素(GA)、玉米素(ZR)和油菜素内酯(BR)五种内源激素含量的影响。结果表明:经15%乙醇(EtOH)中溶入1%氯化钙(CaCl2)和15%乙醇(EtOH)处理后的‘红地球’葡萄果实,可溶性固形物含量(TSS)的积累被显著抑制,可滴定酸含量(TA)转色期后下降减缓,果皮的着色进程显著减缓,但可滴定酸含量成熟后期无明显变化。同时,种子ABA含量、BR含量和果皮ZR含量成熟后期峰值期延迟,果肉GA的含量显著降低,果实的成熟进程延缓。

【Abstract】 Using‘Red Globe’grape as test material,after 1% calcium chloride(CaCl2),15% ethanol(EtOH) were dissolved in 1% calcium chloride(CaCl2) and 15% ethanol(EtOH),the ethanol treatment was detected. Effects on the fruit maturation characteristics and grape abscisic acid(ABA),auxin(IAA),gibberellin(GA),zeatin(ZR),and brassinolide(BR) five endogenous hormone contents during grape color transformation. The results showed that the accumulation of soluble solids content(TSS) in‘Red Globe’grapes treated with 1% calcium chloride(CaCl2) and 15% ethanol(EtOH) in 15% ethanol(EtOH) was significantly inhibited. The decline of the titratable acid content(TA) slowed down after the color transfer period,and the coloring process of the peels slowed down significantly,but there was no significant change in the titratable acid content in the later stages of maturity. At the same time,the ABA content,BR content,and ZR content of the seeds were late at the peak stage of ripening,the GA content of the pulp was significantly reduced,and the ripening process of the fruit was delayed.
