上海市售肉制品中单核细胞增生李斯特氏菌污染监测和定量分析

【摘要】 为了解上海市售肉制品中单核细胞增生李斯特氏菌(简称:单增李斯特菌)污染情况,笔者分别采用GB/T 4789.30—2008中"常规培养方法"、参考ISO 11290-2:1998和美国细菌学分析手册(BAM)中单增李斯特菌最可能污染数(MPN)检测程序,对2008—2010年和2011—2013年上海市售肉制品中单增李斯特菌污染情况进行监测和分析。结果显示,2075件市售肉制品中,生鲜畜禽肉中单增李斯特菌检出率较高(87/771,11.28%),散装即食肉制品和预包装即食肉制品中单增李斯特菌检出率较低(3/854,0.35%和1/450,0.22%);蒙特卡罗抽样模拟计算结果显示:市售生鲜畜禽肉、散装即食肉制品和预包装即食肉制品中单增李斯特菌污染符合泊松对数正态分布(-2.419,2.336)、(-3.735,2.325)和(-3.870,2.334)(log(MPN/g)),且生鲜畜禽肉比即食肉制品中单增李斯特菌污染水平高近20倍。通过上述结果可以看出,上海市售肉制品中单增李斯特菌污染较严重,模拟计算获得的即食肉制品单增李斯特菌污染水平可用于改进风险监测体系和开展定量风险评估。

【Abstract】 To analyse the prevalence and level of Listeria monocytogenes in retail meat products in Shanghai municipality. Routine cultural method referencing GB/T 4789.30—2008 was used to qualitatively detect the contamination of Listeria monocytogenes in retail meat products from 2008 to 2010,and MPN method referencing ISO 11290-2:1998 and BAM also quantitatively used from 2011 to 2013.87 products were detected Listeria monocytogenes positive in 771 raw meat and pourtry samples(11.28%). Bulk deli-meats and prepackaged ready-to-eat meats have lower prevalence of 0.35%(3/854) and 0.22%(1/450) in Listeria monocytogenes. Monte-Carlo simulation shows Listeria monocytogenes levels in raw meats,deli-meats and prepackaged ready-to-eat meats fit to Poisson Lognormal Distributions,with(-2.419,2.336),(-3.735,2.325)and(-3.870,2.334)(log(MPN/g))successively,in addition,contamination level of Listeria monocytogenes in raw meats is 10 times higher than in ready-to-eat meats.Shanghai retail meat products were severely contaminated with Listeria monocytogenes and the simulated contamination levels in ready-to-eat meats can be used for risk monitoring improvement and quantitative microbiological risk assessment.
