虾壳粉氨基酸和脂肪酸营养成分分析

【摘要】 为探索克氏原螯虾下脚料(虾壳粉)的资源化利用,本试验对虾壳粉的一般营养成分、氨基酸、脂肪酸和矿物元素组成进行测定及分析评价。结果表明:一般营养成分,虾壳粉中水分、粗蛋白质、粗脂肪、灰分的含量分别为4.62%、33.72%、10.27%、34.58%;虾壳粉氨基酸总含量(TAA)为27.47%,7种必需氨基酸(∑EAA)总含量为8.58%,9种非必需氨基酸(∑NEAA)总含量为18.89%,鲜味氨基酸总含量(∑DAA)为8.75%,EAA/TAA值为31.23%,EAA/NEAA值为45.42%;检测出饱和脂肪酸11种,占脂肪酸总含量的41.92%;单不饱和脂肪酸4种,占脂肪酸总含量的48.10%;多不饱和脂肪酸6种,占脂肪酸总含量的9.98%;矿物元素中以Ca含量最高,其次是K、Na、Mg,微量元素中,以Fe含量最高,其次是Mn、Zn、Cu、Ni、Cr、As、Hg、Sn、Ti、Cd、Sb、Se、Pb,重金属含量低于国家标准限量。综上,虾壳粉作为小龙虾加工副产物,其蛋白质含量高,矿物元素含量丰富,作为饲料蛋白源和矿物元素补充剂,具有较大的开发利用价值。

【Abstract】 In order to explore the resource utilization of the scraps of Procrustus clarkii. The general nutrient composition,amino acids,fatty acids and mineral elements of crawfish shell meal(CSM) were detected and analyzed. The results showed that the contents of moisture,crude protein,crude fat,and ash in CSM were 4.62%,3.72%,10.27% and 34.58%,respectively. The total amino acid content(TAA) of crawfish shell meal was 27.47%,the total content of 7 essential amino acids (ΣEAA) was 8.58%,the total content of 9 non-essential amino acids (ΣNEAA) was 18.89%,and the total content of delicious amino acids (ΣDAA)was 8.75%. EAA/TAA value was 31.23%,EAA/NEAA value was 45.42%;We detected a total of 21 fatty acids in crawfish shell meal with including 11 saturated fatty acids,4 monounsaturated fatty acids,and 6 polyunsaturated fatty acids,which accounting for 9.98%,41.92% and 48.10% of the total fatty acid content,respectively;Among the common mineral elements,the Ca content was the highest,followed by K,Na,Mg.Among the trace mineral elements,the Fe content was the highest,followed by Mn,Zn,Cu,Ni,Cr,As,Hg,Sn,Ti,Cd,Sb,Se,Pb. The heavy metal contents,such as Pb,Hg,Cr,As,Cd,which were lower than the Chinese national standard limits. In summary,as a by-product of crayfish processing,crawfish shell meal has high protein content and rich mineral elements. It has great development and utilization value as a feed protein source and mineral element supplement.
