食品安全事件案例的编写及其在教学中的应用

【摘要】 解决生产和生活实践中问题的能力是"食品加工与安全"领域专业硕士的核心培养目标之一,而从科学、专业的角度来剖析食品安全事件本质的教学案例少之又少,极大地限制了学生对相关知识的掌握与灵活运用。详细阐述了食品安全事件案例编写过程中的案例选取依据和编写规范等注意事项,并对这些案例在"食品质量与安全控制专题"课程中的教学实践应用进行了探究,以期为案例教学在该领域专业硕士教学中的推广实施提供理论和实践基础。

【Abstract】 The ability to solve problems in production and life was one of the core cultivating objectives for professional master of food processing and security.However,the teaching cases analyzing the nature of the food safety incidents from the perspective of scientific and sprofessional are fewer and fewer.Hence,it greatly confines the good command and flexible application of students for related knowledge.This paper described the the basis for selecting cases,writing specifications and the matters needing attention in the case writing procedure.In addition,the teaching practice of the cases in the course of Food Quality & Safety Control was also explored.The above results provided the theory and the practice foundation for the popularization and implement of case teaching in the area of professional master.
