不同酶解胶原肽的制备及抗氧化活性研究
Preparation and Antioxidant Activity of Different Enzymatic Collagen Peptides
【摘要】 为了探究酶种类对酶解胶原肽抗氧化活性的影响,以罗非鱼鱼皮为材料,用碱性蛋白酶、中性蛋白酶和胰蛋白酶酶解得到三种胶原肽,比较其对DPPH、·OH和O-2·自由基清除能力.结果显示,碱性蛋白酶胶原肽、中性蛋白酶胶原肽和胰蛋白酶胶原肽均具有抗氧化活性,其中碱性蛋白酶胶原肽对DPPH、·OH和O-2·自由基清除能力优于中性蛋白酶胶原肽和胰蛋白酶胶原肽,且三种胶原肽抗氧化活性与其水解度呈正相关.
【Abstract】 To investigate the effect of enzyme types on the antioxidant activity of the hydrolyzed collagen peptide, tilapia fish skin was used as the material, and three collagen peptides were obtained by enzymatic hydrolysis of alkaline protease, neutral protease and trypsin to compare their scavenging ability to DPPH, ·OH and O-2·free radicals. The results showed that alkaline protease collagen peptide, neutral protease collagen peptide and trypsin collagen peptide all had antioxidant activity. Among them, alkaline protease collagen peptide had better ability to scavenge DPPH, ·OH and O-2· radicals than neutral protease collagen and trypsin collagen peptide. The antioxidant activities of three collagen peptides were all positively correlated with their degree of hydrolysis.
