【摘要】 本文从民族考古、酿造工艺、科技考古和社会功能研究四个方面梳理了一个世纪以来中国学术界关于酿酒起源研究的学术史,指出当前对于典型酒器、酒类、曲蘖、酒礼等基本问题已经有了一定认识,但仍然存在很多薄弱环节,今后应该特别加强科技考古和跨文化比较研究,探索古酒起源与农业社会起源的关系。更多还原

【Abstract】 This paper reviews the academic histo ry of the research on the origin of wine making in China in the past century from four aspects of national archaeology, brewing technology, scientific and technological archaeology and social function research. It points out that there are certain understandings on typical wine wares, wine category,distiller’s yeast, wine ritual, etc., but there are still many questions. In the future, we should especially strengthen scientific and technological archaeology and cross-cultural research through comparative study, exploring the relation-ship between the origin of ancient wine and the origin of agricultural society.更多还原
