一种淀粉类污垢含酶清洁剂及清洗工艺的研究
Study on an Enzyme-containing Detergent for Starch Dirt and Its Cleaning Process
【摘要】 目的:为了研究食品行业针对淀粉类污垢的复配化学品及其清洗工艺。方法:本研究以阳离子和非离子表面活性剂为原料进行复配,并添加α-淀粉酶,通过单因素试验和正交试验分析优化得到淀粉污垢清洗的最佳工艺参数。结果:1.5 mL 5%(v/v)苯扎氯铵,5.5 mL 5%(v/v)椰子油二乙醇酰胺,0.25 gα-淀粉酶用量,以去离子水定容至25 mL配制成洗涤剂,在震荡频率150 r/min,清洗温度40℃,清洗时间10 min的条件下,对1.0 g淀粉类污垢清洗效果最好。结论:该复配型清洗剂在优化条件下对于淀粉类污垢具有良好的去污性。该研究对食品加工行业淀粉类污垢的清洗工艺有一定的理论指导意义。
【Abstract】 Objective:o study the complex chemical and cleaning process for starch dirt in the food industry.Methods: he cationic and non-ionic surfactants were used as raw materials for compounding with the addition of α-amylase, and the best parameters were optimized for starch dirt cleaning through a single factor test and orthogonal test.Results: The optimized condition of starch dirt cleaning was as followed. Firstly, 1.5 mL 5%(v/v) benzalkonium chloride, 5.5 mL 5%(v/v) coconut oil diethanolamine, and 0.25 g α-amylase were dilute with deionized water to 25 mL. Under 150 r/min, 40 ℃, and 10 min, the enzyme-containing detergentshowed the bestcleaning effect on 1.0 g starchy dirt.Conclusion: The compound cleaning agent has good detergency for starch dirt under optimized conditions. This study has certain theoretical guiding significance for the cleaning process of starchy dirt in the food processing industry.
