黑米黑色素的稳定性研究
Study on the stability of black rice melanin
【摘要】 以黑米为原料,采用超声波提取技术提取黑米黑色素,研究了水溶液中黑米黑色素在不同的pH值、光照、温度、还原剂、氧化剂、防腐剂和金属离子存在下的稳定性.结果表明,黑米黑色素在酸性环境下,在有Na+、Mg2+、Ca2+、Zn2+、Fe3+存在,和有还原剂、防腐剂和避光条件下,且温度低于60℃时,黑米黑色素的稳定性较好.
【Abstract】 In this paper,the stability of black rice melanin in the presence of different pH values,light,temperature,reducing agent,oxidant,preservative and metal ions was studied.The results showed that black rice melanin was at pH<6,in the presence of Na+,Mg2+,Ca2+,Zn2+,Fe3+,and a certain concentration of ascorbic acid,benzoic acid and dark conditions,and the temperature was lower than 60 ℃,the black melanin was stable,it can be used in the food and beverage industry.
